Dhaba-Style Egg Curry

4.8/5 (0 reviews)
dhaba-style egg curry with boiled eggs in rich onion tomato gravy and coriander

Dhaba-style egg curry is defined by a well-browned onion-tomato masala, eggs that are fried before they go into the gravy, and a finish of garam masala and kasuri methi. Frying the boiled eggs gives them a light golden skin that holds up in the curry and stops them tasting plainly boiled against a rich gravy. The masala needs patience more than technique: cook the onions until properly golden and the tomatoes until the oil separates, because that browning is the flavour base of the whole dish. Keep the gravy medium-thick so it coats the eggs and works with both roti and rice. Halve one egg at serving if you like, so the yolk shows, and serve the rest whole. Leftovers keep well overnight in the fridge, and the gravy tastes even more settled the next day when reheated gently.

Step-by-Step Instructions

10 steps
  1. 1

    Step 1

Boil the eggs for 10 minutes, cool them in water, peel, and prick each egg lightly with a fork. Rub them with 1/4 tsp of the turmeric powder and 1/2 tsp of the red chilli powder.

  2. 2

    Step 2

Heat 1 tbsp oil in a kadai on medium heat. Fry the eggs for 2 to 3 minutes, turning them, until light golden in patches. Remove and set aside.

  3. 3

    Step 3

Add the remaining 2 tbsp oil to the same kadai. Add the cumin seeds and let them crackle.

  4. 4

    Step 4

Add the onions and cook for 8 to 10 minutes, stirring often, until deep golden.

  5. 5

    Step 5

Add the ginger-garlic paste and cook for 1 minute.

  6. 6

    Step 6

Add the tomatoes, green chillies, the remaining turmeric powder, the remaining red chilli powder, coriander powder and salt. Cook for 6 to 8 minutes until the masala thickens and the oil separates at the sides.

  7. 7

    Step 7

Pour in 300 ml hot water, stir, and bring to a simmer. Cook for 3 minutes to bring the gravy together.

  8. 8

    Step 8

Add the fried eggs. Cover and simmer on low heat for 5 minutes so the eggs absorb the flavour of the gravy.

  9. 9

    Step 9

Sprinkle in the garam masala and kasuri methi, stir gently, and cook for 1 minute.

  10. 10

    Step 10

Switch off the heat, garnish with coriander leaves, rest for 5 minutes, and serve hot with roti or rice.

Chef's Pro Tip

For optimal flavor, ensure all fresh spices are freshly roasted or ground before adding. Adjust seasoning gradually according to taste and let the dish rest for 3–5 minutes before serving.
