Kashmiri Dum Aloo
Kashmiri Dum Aloo is a rich potato curry where small whole potatoes are fried until golden and then simmered slowly in a curd-based gravy scented with fennel, dry ginger, and Kashmiri red chillies. The gravy is deep red, mildly hot, and aromatic rather than fiery, and the potatoes soak up the flavour as they cook on dum. Traditionally, this version is made without onion and garlic, which keeps the taste clean and lets the whole spices come through. Serve it with steamed rice, naan, or rotis for a festive lunch or a special weekend meal. One practical tip: whisk the curd well and add it on low heat, stirring continuously for the first minute — this stops the gravy from splitting.

Step 1
Wash the baby potatoes well. Boil them in water until just tender but still firm, then drain and peel them. Prick each potato a few times with a fork or toothpick so it absorbs the gravy.
-
2
Step 2
Heat the mustard oil in a heavy kadhai until it just begins to smoke lightly, then lower the heat. Fry the potatoes in batches until golden all over. Remove and keep aside.
-
3
Step 3
In the same oil on low heat, add the cumin seeds, black cardamoms, cinnamon stick, cloves, and bay leaf. Let them sizzle for a few seconds, then add the asafoetida.
-
4
Step 4
Mix the Kashmiri red chilli powder with 2 tbsp of the measured water to make a paste and add it to the kadhai. Cook for 1 minute, stirring, until the oil takes on a deep red colour.
-
5
Step 5
Lower the heat fully. Add the whisked curd a little at a time, stirring continuously, and cook for 2 to 3 minutes until the curd blends in and the oil begins to separate at the edges.
-
6
Step 6
Add the fennel powder, dry ginger powder, and salt, and mix well.
-
7
Step 7
Return the fried potatoes to the kadhai and add the remaining water. Mix gently, cover with a tight lid, and simmer on the lowest heat for 12 to 15 minutes so the potatoes cook on dum and absorb the gravy.
-
8
Step 8
Sprinkle the garam masala, cover again, and rest for 5 minutes off the heat.
-
9
Step 9
Garnish with the chopped coriander leaves and serve hot.
Chef's Pro Tip
For optimal flavor, ensure all fresh spices are freshly roasted or ground before adding. Adjust seasoning gradually according to taste and let the dish rest for 3–5 minutes before serving.
