Medu Vada
Medu Vada is a crisp, golden South Indian fritter of ground urad dal, shaped like a small doughnut, with a fluffy, soft centre and a crunchy crust. The dal is soaked, ground to a thick, airy batter, and given a short rest — most of that preparation time is inactive soaking and resting, not hands-on work, and it is counted in the prep time below so the total stays honest. The active work is the grinding, shaping, and frying, which together take under an hour. Medu vada is a classic tiffin and breakfast item, usually served with sambar and coconut chutney, and it is also festive enough for a weekend spread. One practical tip: grind with as little water as possible, adding it a spoon at a time — a loose batter will not hold its shape and will drink up oil while frying.

1
Step 1
Add the rinsed urad dal to a large bowl, pour in the 1 litre water for soaking, and soak for 4 hours. This soaking is inactive time and is included in the prep time above. Drain completely before grinding.
-
2
Step 2
Transfer the drained dal to a mixer-grinder or wet grinder. Grind to a thick, smooth, fluffy batter, adding the ice-cold water only a spoon at a time — use as little as you can, stopping to scrape down the sides. The batter should be thick enough to hold soft peaks and hold its shape on a spoon.

Step 3
Transfer the batter to a bowl and whisk it briskly in one direction for 2–3 minutes to incorporate air. Cover and rest for 20 minutes — this resting time is also inactive and is included in the prep time above.
-
4
Step 4
Add the green chilli, ginger, curry leaves, fresh coriander leaves, crushed black peppercorns, asafoetida, and salt to the rested batter. Mix gently until evenly distributed.
-
5
Step 5
Heat the oil in a deep kadhai on medium heat until hot but not smoking, about 170–180°C.
-
6
Step 6
Wet your palms lightly with a little of the ice-cold water, take a lemon-sized portion of batter, flatten it slightly in your palm, make a hole in the centre with your thumb, and slide it gently into the hot oil. Fry in small batches of 4–5 so the oil temperature does not drop.
-
7
Step 7
Fry for 3–4 minutes per batch, turning once or twice, until the vadas are deep golden and crisp all over.
-
8
Step 8
Lift out with a slotted spoon, drain briefly on kitchen paper, and repeat with the remaining batter. Serve hot.
Chef's Pro Tip
For optimal flavor, ensure all fresh spices are freshly roasted or ground before adding. Adjust seasoning gradually according to taste and let the dish rest for 3–5 minutes before serving.
