Sabudana Khichdi

Sabudana khichdi with glossy tapioca pearls, diced potato and crushed peanuts in
a steel plate, garnished with coriander and a lemon wedge

Sabudana Khichdi is a Maharashtrian favourite made with soaked tapioca pearls tossed with diced potato, crushed roasted peanuts, cumin, curry leaves and green chillies, finished with lemon juice and coriander. Done well, the pearls stay separate, glossy and softly chewy — never sticky or clumped — and the peanuts add a gentle crunch in every bite. It is naturally made without any wheat or gluten-containing ingredients and is commonly eaten for breakfast or as a light meal. Please note the soaking clearly: the sabudana must soak for 4–5 hours, or overnight, before cooking — that soaking time is inactive time and is not counted in the prep, cook or total times below, which cover only the active work. Practical tip: soak the pearls in just enough water to cover them, not more — excess water is the most common reason sabudana turns sticky.

Step-by-Step Instructions

7 steps
  1. 1

    Step 1

Rinse the sabudana 2–3 times in water until the water runs mostly clear. Add the 250 ml water, cover and soak for 4–5 hours, or overnight, until a pearl presses easily and flattens between your fingers without a hard white centre. Drain any remaining water completely.

  2. 2

    Step 2

Sprinkle the salt and sugar over the soaked sabudana and mix gently with your fingers or a fork to separate the pearls without breaking them.

  3. 3

    Step 3

Heat the oil in a wide, heavy pan or kadhai on medium heat. Add the cumin seeds and let them splutter for a few seconds.

  4. 4

    Step 4

Add the curry leaves and finely chopped green chillies and fry for a few seconds until fragrant.

  5. 5

    Step 5

Add the potato cubes, cover and cook on low-medium heat for 6–7 minutes, stirring occasionally, until the potato is tender and lightly golden at the edges.

  6. 6

    Step 6

Add the soaked sabudana and the coarsely crushed roasted peanuts. Mix gently and cook on low heat for 5–6 minutes, stirring carefully every minute, until the pearls turn translucent and separate. Do not cover the pan at this stage, as covering can make the khichdi sticky.

  7. 7

    Step 7

Switch off the heat. Add the lemon juice and fresh coriander leaves, toss gently once and serve hot.

Chef's Pro Tip

For optimal flavor, ensure all fresh spices are freshly roasted or ground before adding. Adjust seasoning gradually according to taste and let the dish rest for 3–5 minutes before serving.
