Baingan Bharta
Baingan Bharta is a smoky, mashed brinjal sabzi made by roasting a large brinjal directly over a flame until the skin chars and the flesh turns soft and fragrant, then cooking it with onion, tomato, ginger, garlic and everyday spices. The texture is soft and slightly chunky, not smooth like a puree, and the flavour is earthy with a gentle heat from green chillies. It is a comforting dinner dish that pairs beautifully with hot rotis, phulkas or even plain dal and rice. Serve it fresh and hot, because it loses its smoky punch on reheating. A practical tip: roast the brinjal until it completely collapses and feels heavy and soft — under-roasted brinjal stays spongy and never mashes well.

Step 1
Wash the brinjal, pat it dry and prick it in a few places with a fork. Roast it directly over a medium gas flame, turning often, for 12 to 15 minutes until the skin is fully charred and the brinjal feels soft and collapsed. Keep it in a covered bowl for 10 minutes, then peel off the charred skin, remove the stem, and mash the flesh roughly with a fork. Keep any smoky juices with it.

Step 2
Heat the mustard oil in a kadai on medium heat until it just begins to smoke lightly, then reduce the heat and add the cumin seeds. Let them crackle for a few seconds.
-
3
Step 3
Add the chopped onions and cook for 6 to 7 minutes, stirring often, until golden at the edges.
-
4
Step 4
Add the ginger-garlic paste and chopped green chillies. Cook for 1 minute until the raw smell goes away.
-
5
Step 5
Add the chopped tomatoes, turmeric powder, red chilli powder, coriander powder and salt. Cook on medium heat for 6 to 8 minutes, stirring and mashing the tomatoes, until the masala thickens and oil begins to separate at the sides.

Step 6
Add the green peas and cook for 2 minutes, stirring well.
-
7
Step 7
Add the mashed roasted brinjal along with its juices. Mix thoroughly and cook on low to medium heat for 5 to 6 minutes, stirring often, so the brinjal absorbs the masala flavours.

Sprinkle the garam masala, mix once more and cook for 1 minute. Switch off the heat.

Step 9
Stir in the lemon juice and chopped coriander leaves. Rest for 2 minutes and serve hot with rotis.
Chef's Pro Tip
For optimal flavor, ensure all fresh spices are freshly roasted or ground before adding. Adjust seasoning gradually according to taste and let the dish rest for 3–5 minutes before serving.
