Vegetable Biryani is a layered rice dish where fragrant basmati rice is cooked over a spiced vegetable masala made with onion, tomato, curd and whole spices, then sealed and steamed on dum so the layers absorb each other's aroma. The rice should stay separate and fluffy, the vegetables tender but not mushy, and every serving should have both white and masala-coated grains. It suits festive lunches, Sunday family meals and dinner guests, served with raita or a simple salad. A practical tip: cook the rice only until it is about 70 percent done before layering — it finishes cooking in the dum steam, and fully cooked rice turns soft and broken by the end.

Step-by-Step Instructions

11 steps
  1. 1

    Step 1

Warm the milk and soak the saffron strands in it for at least 15 minutes. Keep aside for layering.

  2. 2

    Step 2

Boil the water in a large pot with 1 tsp salt, 1 bay leaf, 2 green cardamom pods, 2 cloves and half the cinnamon stick. Add the drained soaked rice and cook for 5 to 6 minutes until the grains are about 70 percent cooked — firm in the centre but not raw. Drain immediately and spread on a plate.

  3. 3

    Step 3

Heat the oil and 1 tbsp ghee in a heavy, wide pot on medium heat. Add half the sliced onions and fry for 8 to 10 minutes until crisp and golden brown. Remove and keep aside for layering.

  4. 4

    Step 4

In the same pot, add the remaining bay leaf, cardamom pods, cloves, cinnamon and the cumin seeds. Let the spices crackle for a few seconds.

  5. 5

    Step 5

Add the remaining sliced onions and cook for 5 to 6 minutes until golden. Add the ginger- garlic paste and slit green chillies and cook for 1 minute.

  6. 6

    Step 6

Add the chopped tomatoes and the remaining 1 tsp salt. Cook for 4 to 5 minutes until soft.

  7. 7

    Step 7

Add the mixed vegetables and potato cubes. Mix well, cover and cook on low heat for 6 to 7 minutes until the vegetables are just tender.

  8. 8

    Step 8

Reduce the heat to low. Add the whisked curd, turmeric powder, red chilli powder and biryani masala powder. Stir continuously for 2 to 3 minutes until the masala thickens slightly and coats the vegetables. Switch off the heat.

  9. 9

    Step 9

For layering, spread half the vegetable masala in the pot if it is not already in an even layer, then cover with half the rice. Sprinkle half the fried onions, half the mint leaves, half the coriander leaves, half the saffron milk and 1 tbsp ghee over the rice. Repeat with the remaining masala, rice, fried onions, herbs, saffron milk and ghee. Drizzle the lemon juice on top.

  10. 10

    Step 10

Cover the pot with a tight lid, sealing the edges with a clean kitchen towel if the lid is loose. Cook on high heat for 3 minutes, then on the lowest heat for 20 minutes for the dum. Switch off and rest, covered, for 10 minutes.

  11. 11

    Step 11

Open the lid, gently fluff and mix only the top layer with a fork, and serve hot, digging down so each portion gets both rice and vegetables.

Chef's Pro Tip

For optimal flavor, ensure all fresh spices are freshly roasted or ground before adding. Adjust seasoning gradually according to taste and let the dish rest for 3–5 minutes before serving.
