Sprouted Moong Chaat

4.8/5 (0 reviews)
A bowl of sprouted moong chaat with chopped onion, tomato, cucumber and coriander, with a lemon wedge

Sprouted moong chaat takes the flavours of chaat — lemon, chaat masala, green chilli, crunchy onion — and puts them on a base that needs no frying and almost no cooking. The sprouts are steamed briefly, just enough to take off the raw edge while keeping their bite, then tossed warm with chopped vegetables so they absorb the seasoning. Potato adds a little body, cucumber and tomato keep it fresh, and coriander brings it together. The key is timing: add the lemon juice and the crunchy vegetables at the end, and serve soon after mixing, before the vegetables release water and soften everything. It works as an evening snack, a light side with lunch, or a bowl to put out when people want something tangy without reaching for fried food.

Step-by-Step Instructions

7 steps
  1. 1

    Step 1

Rinse the sprouted moong and drain it well. Check the sprouts and discard any that smell sour or look discoloured.

  2. 2

    Step 2

Bring the water to a boil in a pan, place the sprouts in a steamer basket or colander over it, cover, and steam for 4 to 5 minutes until just tender but still firm. If you do not have a steamer, simmer the sprouts in the same water for 3 to 4 minutes and drain immediately.

  3. 3

    Step 3

Tip the warm sprouts into a wide mixing bowl and let the steam escape for a minute so the bowl does not become watery.

  4. 4

    Step 4

Add the diced boiled potato to the warm sprouts and sprinkle over the chaat masala, roasted cumin powder, red chilli powder, black salt and salt. Toss gently so the seasoning coats the sprouts while they are warm.

  5. 5

    Step 5

Add the onion, tomato, cucumber and green chilli. Toss again, lightly, so the vegetables stay distinct and crunchy.

  6. 6

    Step 6

Pour over the lemon juice and add the chopped coriander leaves. Mix once more and taste, adjusting salt or lemon juice if needed.

  7. 7

    Step 7

Serve immediately in small bowls. Do not leave the mixed chaat sitting for long, as the vegetables and salt will draw out water.

Chef's Pro Tip

For optimal flavor, ensure all fresh spices are freshly roasted or ground before adding. Adjust seasoning gradually according to taste and let the dish rest for 3–5 minutes before serving.
